Shrimp and Spinach

Here is another quick and eyeballing recipe. I like having frozen vegetables in my fridge. They are a great option to add to any preparation. In this case I saute some shrimp with butter and added chopped frozen spinach, lemon zest, lemon juice, salt, pepper and garlic. I served it with jasmine rice that I cooked with broth. If you have tortillas you can make a wrap, or add it to your favorite pasta. As you can see in the pictures I also made a quick lunch for my 8 month old. I mixed the rice (while hot) with frozen peas and frozen chopped spinach, added some extra virgin olive oil and we had a happy lunch.




Chopped garlic

Lemon zest

Lemon juice

Salt and pepper

Butter or olive oil

Serve it with:

Rice, pasta, roasted sweet potatoes, tortillas, or your favorite grains.


  1. In a saute pan melt the butter

  2. Add the garlic, saute few minutes

  3. Add the shrimp, cook

  4. Add some salt and pepper

  5. Add the spinach

  6. Toss around

  7. Add lemon zest, lemon juice

  8. Taste and fix salt and pepper
