Veggie Tart (Puff Pastry)

This recipe combines the buttery crispness of puff pastry with an array of seasonal fresh vegetables and tangy feta cheese. This veggie tart is perfect for both casual gatherings and special occasions. Serve warm or at room temperature as a delightful appetizer or enjoy with your favorite salad. When buying puff pastry sheets don’t forget to check the ingredients, make sure that you are getting a brand that is using butter and not different oils. Since puff pastry tarts are easy to assemble I love having puff pastry sheets in my freezer. 



Ingredients:

  • Puff pastry

  • Green onions

  • Mushrooms

  • Cherry tomatoes

  • Feta cheese

  • Garlic cloves or garlic powder

  • Olive oil

  • Salt and pepper, to taste

Instructions:

  1. Preheat the oven to 400°F (200°C)

  2. Unroll and gently roll out the puff pastry sheet to a size that fits your baking dish

  3. Place the rolled-out pastry onto a baking sheet or dish 

  4. Use a fork to prick the surface of the pastry to prevent excessive puffing while baking

  5. Bake the puff pastry in the preheated oven until it turns a light golden brown color and puffs up, usually around 15-20 minutes. Keep an eye on it to prevent over-browning

  6. Once done, remove it from the oven and let it cool slightly

  7. While the puff pastry is baking, prepare the vegetables

  8. Slice the mushrooms, cut the tomatoes, slice the green onions, and finely chop the garlic

  9. In a mixing bowl, combine the vegetables, crumbled feta cheese, a drizzle of olive oil and salt and pepper 

  10. Once the baked puff pastry has cooled slightly, carefully split it into two layers, ensuring the top layer remains intact

  11. Spread the vegetable and cheese mixture evenly over the bottom layer of the puff pastry

  12. Carefully place the top layer of puff pastry over the vegetable mixture

  13. Sprinkle additional crumbled feta cheese on top for extra flavor

  14. Lower the oven temperature to 350°F (175°C) and place the assembled tart back in the oven. Bake for about 10 minutes, or until the tart gets a golden brown color on the top.

  15. Once baked, remove the tart from the oven and allow it to cool for a few minutes before slicing
