Mango Apricot Chia and Strawberry Popsicles

Let's make more popsicles before the summer is gone. This time around I made lime-strawberry and apricot-mango with chia seeds popsicles. I reserved around ½ of a cup from each fruit puree to use it as a marmalade/fruit spread. This goes great with waffles, pancakes, nut butter sandwiches or just add a few tablespoons to a cup with sparkling water for an afternoon refreshment. I poured half of the batter of each one of the flavors into the molds and the other half I mixed it with yogurt and poured it into another mold. I made the fruit purees the day before. I tried adding some sprinkles, but this didn’t work. Once I took the popsicles out of the mold the sprinklers started melting, and the colors mixed.


Flavor #1

Ingredients:

2 lbs strawberries

The juice of 4 limes

Honey to taste. I would start with few tablespoons first

Around ½ cup to 1 cup of yogurt


Flavor #2

Ingredients:

2 mangos

1 apricot

4 tablespoons of chia seeds

Honey to taste. I would start with few tablespoons first

Around ½ cup to 1 cup of yogurt


Directions:

  1. You will need one pot for each flavor

  2. In a pot, bring to a simmer the fruit and cook for about 15 minutes

  3. Turn off

  4. Add the honey and lime

  5. Blend the fruit

  6. Let it cool down

  7. If adding chia seeds, or yogurt this is the time

  8. Fill the popsicle molds. Feel free to play around with the flavors

  9. To few molds I added both flavors

  10. For both mixture you can either use a spoon, a squeeze bottle, piping bag, anything that works for you

  11. Place a wooden stick in the middle of each mold

  12. Freeze and then enjoy!
