You can use this tapenade as a snack, to spread on crackers, to add to a salad or to serve with roasted chicken. Do not throw away the olive’s brine. In the following recipe I’ll show you how to marinate chicken with this brine. This recipe is super simple and tasty, the lemon gives balance to the saltiness of the olives. I used green olives stuffed with garlic, that's why you won't see garlic in the ingredients list. If you use another type of olives, add garlic. Ingredients:
1 jar of garlic olives. I used Trader Joes olives stuffed with garlic
Between ¼ to ⅓ cup of extra virgin olive oil
1 teaspoon dried thyme
1 lime juice
Pepper
Directions:
1. In a food processor pulse all of the ingredients until you get a chunky mixture
2. Taste and correct the flavor
3. You could add more extra virgin olive oil, herbs, lime or chili flakes
