What I like most about making waffles is that I don't have to keep an eye on flipping them or trying to portion them all the same size as with pancakes. I only have to worry about not pouring too much batter into the waffle iron and not having it boil over. If you double this recipe you will have extra to freeze and you have a breakfast ready for any day of the week. Personally I like my waffles crispy, but my daughter and hubby like them soft, so when I take them out of the freezer, I reheat them in the toaster oven, I leave mine for longer, so I get the crispy texture that I’m looking for. We like to eat them with butter, maple syrup or honey and fruit.
Makes: 3 1/2 waffles Prep time: 10 mins Cooking time: 5 mins Total time: 25 mins
Ingredients:
1 cup whole wheat flour
½ cup oats
1 ¼ teaspoon baking powder
½ teaspoon baking soda
⅛ teaspoon salt
2 eggs
1 cup of milk, I used almond milk
⅓ cup applesauce
2 tablespoons oil, I used avocado oil
Toppings: butter, maple syrup, honey, fruit spread, fruits, choco chips.
Directions:
Preheat the waffle maker
In a mixing bowl whisk all of the dry ingredients
Add the rest of the ingredients
Mix well
When the waffle maker is hot brush or spray with some oil
Pour the batter and cook until done
Serve with your favorite toppings
