Slightly Sweet Granola with Chocolate

I really like granola, and I prefer to make it at home because I like it slightly sweet, I know what I’m eating and it's cheaper than the store bought brands with cleaner ingredients. If you have tried any of my recipes you know that I don't like to cook too sweet, so this granola is slightly sweet. If you have a sweet tooth and like your granola sweeter feel free to increment the sweetener quantity or just add a drizzle of honey or maple syrup when serving. This granola is loose and crunchy, so it's perfect for adding to a bowl of fruit and yogurt, an acai bowl and you can even use it as a topping on a fruit tart. Here is a list of ingredients that you can swap in this recipe: seeds and/or nuts, oil: avocado oil, olive oil, coconut oil. If you increase the sweetener quantities, it is going to brown faster, so check often while it is cooking. The best way to know if the granola is done is by the look, your goal is to get a golden brown color. If you taste the granola while it is hot or warm it isn't going to be crunchy, you need to let it cool down. If you want to bring this granola to the next level you can add some chocolate chips once it is done. After you take the sheet pan out of the oven add the chocolate chips on top, toss around, and let it cool down.



Yield: 8 cups Preparation time: 20 minutes Cooking time: about 20 minutes.

Ingredients:

½ cup oil. I used ¼ cup avocado oil and ¼ cup olive oil

½ cup sweetener. I used ¼ cup honey and ¼ cup coconut sugar

½ cup hot water

2 teaspoon vanilla

⅓ cup sunflower seeds

⅓ cup pumpkin seeds

⅔ cup shredded coconut

2 tbsp chia

¼ cup hemp seeds

4 cups oatmeal flakes. I used quick oats


Optional add on chocolate chips. Once the granola is done, take it out of the oven, add the chocolate chips, toss and let it cool down.


Directions:

  1. Line a baking sheet with parchment paper

  2. In a bowl mix the wet ingredients. It is important that the water is warm, so it is easier to incorporate the sugar and/or honey. I used water from the kettle.

  3. Add the rest of the ingredients

  4. Mix well

  5. On a baking sheet lined with parchment paper, spread the granola so that it cooks evenly.

  6. Bake at 350

  7. After 10 minutes toss it, so that the corners do not burn. The edges and corners will cook faster.

  8. Check every 5 to 10 minutes and when the granola is golden brown, remove from the oven and let it cool down.

  9. Enjoy with your favorite fruits at the time of day you feel like it.


Tips:

If the seeds or nuts that you have are toasted add them when the granola is ready, otherwise they will get too toasted or burn a little.

If you use almonds or any kind of nuts that are a little big I recommend chopping them up a little.
