Quick Cilantro Rice

This is a simple recipe that will take your meal to another level. You just need chopped cilantro, lime juice, extra virgin olive oil and cooked rice. When you cook the rice just make sure that the water has a good amount of salt, you also can use broth or add a quarter of an onion to the water. Yes sounds pretty easy, but I assure you that if you bring this dish to a potluck party everyone is going to love it. Just make sure that when adding the rest of the ingredients to the rice you don’t stir it too much otherwise it is going to get mushy.

The liquid amount is going to depend on the type of rice that you use. If I remember ahead of time I like leaving the rice soaking for around 4 to 12 hours. If you soak the rice just keep in mind that the cooking time is going to be shorter and also the water ration is lower. For example if I use brown rice and I leave it soaking overnight when I cook it, add 1.5 cups of water instead of 2 cups of water that is the amount that you will normally use.

For my daughter's plate I made a face using the rice and an egg cup. I filled the egg cup with the rice, pressed the rice slightly with my fingers and then transferred to the plate. A cup or a ring mold will work well too.

Serves: 2 to 3 people


1 cup of rice

1.5 cups of broth or water

½ bunch of cilantro

Extra virgin olive oil

Salt and pepper


  1. Cook the rice following packaging instructions

  2. Wash and pat dry the cilantro with a paper towel

  3. Chop the cilantro leaves and stems

  4. Once the rice is cook toss with all of the ingredients

  5. Don't over mix, otherwise you will get a clumpy rice

  6. Taste

  7. Fix to your taste

Notes: if using brown rice you will need 2 cups of liquid per cup of rice. If you soak the rice overnight you will only need 1.5 cups of liquid for each cup of rice.
