I had some leftover cooked rice and I didn’t feel like making fried rice as I usually do with leftovers. I remembered a really good peruvian dish called tacu tacu, so I decided to make something similar. Feel free to add any type of vegetables, or a different kind of meat. If you follow a vegan or vegetarian diet, you are good to go without the sausage. For the beans I used canned beans. As a side dish I made a red onion relish called salsa criolla. I didn't have aji amarillo paste, I made it with just onions, cilantro, salt and lime juice and it was crisp, colorful, delicious and fresh. I made this meal on the go and I didn't measure any ingredients, so I'll list all of the ingredients and post the pictures for better guidance.
Ingredients:
Cooked rice, I used brown rice
Cooked beans, i used canned black beans
Diced sausage or ham hock
Onion, diced
Oregano, I used dried oregano
Dash of cumin
Dash of paprika
Chopped green onions
Directions:
Make the rice
Cook the beans or use canned beans
With a little bit of oil saute the onions and the sausage
Add the rice
Add the spices and salt, mix
Add the beans, mix
Let it cook for few minutes
Garnish with the green onions
Serve with your favorite spicy sauce and peruvian style salsa criolla
Red onion relish / salsa criolla
Ingredients:
Red onion, sliced very thin
Cilantro, chopped
Lime, squeeze
Salt and pepper
Directions:
In a bowl mix all of the ingredients
Let it marinade
You can keep it in the fridge for 3 to 5 days
The longer you leave them in the marinade the softer will get
