These cake bites look like a cookie, but they have a cake texture. Are slightly sweet, so feel free to increment the sweetener to ⅓ of a cup, a ½ of a cup or just add extra chocolate chips. I have tried this recipe with coconut sugar and maple syrup and both work great. When buying maple syrup I recommend reading the ingredients list, some brands add corn syrup, sugar or weird unnecessary ingredients. When using chocolate chips for my baked goods I usually prefer mini unsweetened chocolate chips, this way I'm sure that I get chocolate in every bite.

Ingredients:
2 tablespoons avocado oil
1 pouch of apple sauce (1/4 cup)
1 egg
1 teaspoon vanilla
¼ cup coconut sugar or maple syrup
1 cup whole wheat flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon cinnamon
⅛ teaspoon salt
¼ cup shredded carrots and then chopped
¼ cup mini choco chips or raisins. I did half and half
Directions:
In a bowl mix the dry ingredients
In a separate bowl mix the wet ingredients
Shred the carrot, and then with a knife chop until you get really small pieces
Incorporate both mixtures into one bowl
Add the carrot
If you are making two different flavors:
Separate the batter into two bowls
Add the choco chips to one of the bowls and the rainins to the other one
Prepare a baking sheet with parchment paper
With a spoon scoop some of the cookie dough and drop a small to medium dot on the prepared baking sheet
Bake at 350 for about 6 to 8 mins, this is going to depend on the size of the cookie
Let it to cool down
Directions to decorate:
In a glass bowl or a mug melt some chocolate chips. I used the microwave
If you are using eye candies, drop some of the melted chocolate on the cookie and place the eye. Then place the cookies in the refrigerator for a few minutes. This is going to help to set the eye/sprinkles.
Decorate the plate and place the cookies on top
