You can add this avocado cream as a dressing for your salads, to spread on sandwiches and wraps, as a dip, or even to add a little hot sauce and use it as a side spicy sauce. It is very important that you add enough lemon, so it does not oxidize, keeping the nice green color with a very rich citrus taste. Fresh herbs also help to intensify the final color. If you are looking to add or hide vegetables to your recipes in general this sauce is perfect to add fresh spinach when you are blending it, it will add a color and will not change the flavor. Makes: 2 cups Preparation Time: 15 mins
Ingredients:
2 avocados
½ bunch of cilantro
1 garlic
½ teaspoon of dried oregano
The juice of 2 lemons
2 tablespoons olive oil
Splash of red wine vinegar
Salt and pepper to taste
Water, around ½ cup
Optional:
A bunch of spinach
Fresh parsley
Spicy sauce
Chili flakes
Preparation:
Wash and pat dry the fresh herbs. Parsley or cilantro
Place all the ingredients in a blender, and half of the water
Blend until a creamy sauce is obtained
If it is too thick and difficult to blend, add water little by little until a creamy consistency is obtained
Taste
Add more lemon, salt and pepper to taste
