Asparagus Pasta Sauce


A really quick and simple pasta sauce that is creamy, but not super heavy. Goes well with any kind of pasta, you can make it vegetarian or add some roasted chicken or seared shrimp. I served it with hearts of palm “pasta”. First when I saw this pasta version at Trader Joe’s I wasn’t thrilled about it, but I got so many friends talking about this product that I had to try it and I really liked the texture and the mild flavor. The main reason why this pasta didn’t get my attention was because in Venezuela we eat hearts of palm as a salad sliced with tomatoes and avocado, so I was hesitant about the texture and flavor.





Serves: 2-3 ppl Prep time: 10 mins Cooking time: 10/15 mins Total time: 20 mins

Ingredients:


1 small onion, diced

1 garlic clove, minced

1 bunch of asparagus, sliced

2 cups broth

2 tablespoons cream cheese

Chives or green onions

Parmesan cheese

Extra virgin olive oil

Butter

Lemon juice


Directions:

  1. In a saucepan saute with butter the diced onions

  2. When the onions are soft and with some color add the garlic

  3. Stir, add the broth, cook for few minutes

  4. Add the asparagus and cream cheese

  5. Stir well until the cream cheese is dissolve

  6. Cook for few minutes

  7. Add salt, pepper and a splash of lemon juice

  8. Taste and correct to your like

  9. Toss with your favorite pasta, add parmesan cheese and chives




Tip:

Leeks and shallots go well in this sauce. So feel free to add either at the beginning of the preparation.
