Roasted Artichoke Salad

One of the frozen vegetables that is always in my shopping list and in my freezer is artichoke. If you haven't bought them, they come in a bag and most of the time there is nothing else added to it, always read the ingredient list to make sure what you are buying. I add artichoke hearts to empanadas filling, make salads, for pastas, soups or just roast in the oven or airfryer with olive oil and herbs. You also can find them in a can, and usually there are herbs and salt added to it, the texture is super soft and are good for salads and fillings too, I haven’t roasted canned ones. This salad holds perfectly in the fridge for a few days, it’s perfect to make ahead when you have guests or for meal prepping, you always can add arugula, croutons, nuts, or seeds right before serving. For this recipe you need just a few ingredients and it is so versatile that you can add anything. When you make it let me know in the comments if you added any other vegetable to this salad.





Preparation time: 15/25 mins


Ingredients:

1 bag of frozen artichoke hearts

1 to 2 lemons ¾ to 1 cup parmesan cheese

A handful of parsley

Extra virgin olive oil

Salt and pepper


Directions:

  1. Preheat the oven to 400 or the airfryer

  2. In a baking sheet toss the artichoke hearts with olive oil, no need to defrost

  3. Roast until they get a nice golden brown color

  4. Once they are ready, let it to cool down

  5. If you have a whole piece of parmesan cheese (like I did) shave it

  6. Chop the parsley

  7. Slice the artichoke hearts

  8. In a bowl toss all of the ingredients

  9. Taste

  10. Add more lemon juice, salt, pepper or olive oil to your like

  11. I recommend adding some croutons, arugula, nuts, or seeds

  12. Eat or refrigerate to serve later
