This quick soup is inspired by tortellini en brodo, with the difference that you can use whatever broth you have in hand and add the vegetables you like. It's quick to put together and easy to customize, so it's perfect for families with different preferences and tastes. Don;t forget the toppings, some of my favorites are cheese chili flakes, fresh herbs,extra virgin olive oil, croutons, whatever you can think of. I always recommend cooking the pasta first and then adding it to the broth.
Ingredients:
Tortellinis
Your favorite broth
Vegetables. I used: onions, carrots, celery and peas
Toppings: parmesan cheese, chili flakes, fresh herbs,extra virgin olive oil, croutons
Directions:
In olive oil saute the onions, add the carrots and celery
Add the broth and simmer until the veggies cook
In a separate pot, in boiling water cook the tortellinis until they are al dente
Strain the tortellinis and mix with butter or olive oil
Get your toppings ready
When the vegetables and the tortellinis are done, incorporate the tortellinis to the soup
