Quick Citrus Carrot Salad

This salad holds perfectly in the fridge for a few days. It’s super quick to make and it’s perfect to make it the day before you have a party. For the dressing you can use lime, lemon, tangerine, orange, grapefruit, in a few words any citrus in any combination. Today I used yellow carrots, orange carrots, tangerine, lime juice and toasted seeds.You can bring this salad to another level using as an add-on, roasted nuts, raisins, any dried fruit or fresh herbs. Let me know what combination you made!



Serves: 2 to 3 people Takes to make: 15 to 20 minutes


Ingredients:

3 carrots

2 tangerines

1 lime

Extra virgin olive oil

Salt and pepper


Add-on:

Toasted seeds or nuts, raisins, dried fruit, fresh herbs.


Directions:

  1. Shred the carrots into a bowl

  2. Squeeze citrus into the bowl with the shredded carrots

  3. Drizzle some olive oil

  4. Add salt and pepper

  5. If adding a fresh herb add now

  6. Toss

  7. Taste, and add more condiments if necessary
