This is a quick yummy soup for any day of the week. The key for this recipe is using a clear chicken, veggie or fish broth. I added the fish at last and tried not to stir much because I wanted to have bite size fish pieces. You can make this recipe with any kind of fish, shrimp or calamari. For me garnishes in soups are a must. I added a squeeze of lime juice, and cilantro. If you like spicy food some crispy chili oil goes great with this. Enjoy!
1 to 2 lbs of black cod or any fish
½ diced onion
2 cups of diced mushrooms
½ bunch of kale chopped
4 to 6 cups of clear veggie or chicken broth
1 teaspoon chopped ginger
2 garlic cloves, chopped
Splash of tamari
Splash of coconut aminos
Salt and pepper to taste
Garnish: lime, chopped cilantro, green onion, crispy chili oil.
Saute all the vegetables
Add the ginger and garlic
Add the broth
Simmer until all of the veggies are soft
Add tamari and coconut aminos, a little bit at a time, don’t rush you always can add more
Add the fish
Simmer for few minutes
Taste the soup
Add any condiment that you may be missing
Serve, add the garnishes and eat!
