Butternut Squash Hasselback


This is a quick and fun side dish for the whole family. It’s quick to prepare, but it takes some time in the oven. Since we are in October I decided to make a funny Halloween decoration. For the tongue I used sliced strawberries, for the eyes I used candy eyes, you can use a marshmallow and a chocolate chip and make your own eyes, any fruit would work great too. For the “legs and arms” I used green beans. Good luck! And if you make this funny dish let me know!



Ingredients:

1 Butternut Squash

Olive oil

Garlic powder

Dried sage

Salt and pepper

For the eyes you can use candy eyes, an olive and cheese, cherry tomatoes, blueberries, green beans for the legs and arms, anything that you can think of.


Directions:

  1. Preheat oven at 400 F

  2. Grease a baking dish with some olive oil or butter

  3. Using a peeler, peel the butternut squash

  4. Cut in half, lengthwise

  5. With a spoon scoop out the seeds, reserve the seeds.

  6. In a cutting board place the butternut squash with the inside part facing down

  7. With a sharp knife slice through the round sides, make sure that you don’t cut all the way through

  8. Transfer the butternut squash to the prepared baking dish

  9. Brush both sides with olive oil or butter

  10. Starting with the inside part sprinkle with salt, pepper, garlic powder, dried sage, turn facing down and repeat with the top

  11. Bake at 400 F until the butternut squash has a nice color and is soft to the touch

  12. Take out of the oven

  13. Decor and serve




Tip:

If you try to slice your butternut squash and it is too hard, bake first for about 15/20 mins. Take it out of the oven, let it cool down and finish slicing.
