Bittersweet Whole Wheat Christmas Brownies

This cake style brownies bake quickly and are very fun and easy to decorate. You don't need complicated kitchen utensils, with a spoon you can make fun decorations. In the pictures you can see how I make the eye of one of the faces with melted white chocolate and then place a miniature chocolate chip with the flat side up. If you don't have white chocolate, but you have dark chocolate and shredded coconut, you can make a Christmas tree by melting the chocolate, drizzling on top of the brownie triangle and then add shredded coconut on top, and it will look like a snowy tree. You can also mix the shredded coconut with Christmas colored sprinkles. If you have a small pan I recommend baking this brownie in two batches, so when you cut the triangles they are smaller and there is less chance that they will break when you move them from one side to the other. Since we are going to decorate this cake with melted chocolate and candies I didn't make it too sweet so the flavor balances with the decoration. Portions: about 18 triangles Preparation time: 15 minutes
Decoration time: 15/20 minutes Cooking time: 8 to 10 minutes

Ingredients:

1 cup whole wheat flour

1 teaspoon baking powder

¼ teaspoon salt

½ cup cocoa powder

½ cup coconut sugar or brown sugar

2 eggs

1 stick of butter

1 teaspoon vanilla

½ cup mini chocolate chips

½ cup regular size chocolate chips


Decoration ingredients:

White chocolate chips

Semisweet chocolate chips

Sprinkles for decoration

Shredded coconut

Miniature Marshmallows

Any candy or chocolate that is small



Directions:

  1. Prepare a round cake pan with parchment paper

  2. Preheat oven to 350

  3. In a bowl, mix the melted butter with the sugar

  4. Add the eggs and vanilla, mix well

  5. Stir in the rest of the ingredients

  6. Pour the mixture into the pan. Remember that we don't want it too high, so if you are going to bake them in a small pan, divide it in two batches

  7. Bake for about 8 minutes

  8. Insert a toothpick into the center of the brownie. If the toothpick comes out clean or with a few crumbs, it's done!

  9. Let cool before cutting and decorating. If you don't wait it will break, especially if you make it in a large baking pan

  10. Cut, in my case I used a round cake pan, in the pictures and video I show you how I cut it.


Decoration:

  1. Melt some chocolate. In the microwave in a small glass bowl works perfectly. I recommend stopping every 10 seconds, stirring and checking the texture of the chocolate, it burns fast

  2. For a Christmas tree: with a spoon make diagonal lines in each triangle, then put colored sprinkles or your favorite candies, even cheerios will do!

  3. To make a face you can use sugar eyes and stick them to the brownie with a drop of melted chocolate.

  4. If you don't have sugar eyes you can put a drop of melted white chocolate on the brownie and place a chocolate chip on it with the flat side up, with a mini marshmallow cut in half and placing a chocolate chip in the middle you can do the same thing

  5. For the nose and hat I used M&M's

  6. Let the decoration sit for a good time, until the chocolate gets hard


Tips:

If you don't have a round cake pan and you only have a rectangular pyrex. Follow all the steps and when cutting, cut squares, then make a diagonal cut to each square to get triangles.
